Boil chicken breast in water with a bruised lemongrass stalk and ginger until cooked. Remove chicken, shred the meat, and set aside. Strain the broth.

Sauté minced garlic and shallots in vegetable oil until fragrant. Add coriander powder and white pepper powder, stir briefly.

Add the sautéed aromatics and bay leaf to the strained broth. Bring to a simmer and cook for 15-20 minutes. Season with salt.
