Bahan

  • Rice vermicelli (Mee Hoon)250g
  • Pre-cooked shredded chicken150g
  • Pre-cooked shrimp100g
  • Eggs, lightly beaten2
  • Bean sprouts1 cup
  • Garlic, minced2 cloves
  • Chili paste (Sambal Oelek or similar)1.5 tbsp
  • Soy sauce2 tbsp
  • Sweet soy sauce (Kecap Manis)1 tbsp
  • Vegetable oil2 tbsp
  • Spring onions, chopped, for garnish2 tbsp
  • Saltto taste
  • Black pepperto taste
  • Water1/4 cup

Langkah

    Soak rice vermicelli in warm water until softened, then drain.

    Heat 1 tbsp vegetable oil in a wok or large skillet over medium-high heat. Add beaten eggs and scramble until cooked. Remove and set aside.

    Add remaining 1 tbsp oil to the wok. Add minced garlic, stir-fry until fragrant.

    Add chili paste and stir-fry for 30 seconds.

    Add pre-cooked chicken and shrimp, stir-fry briefly to heat through.

    Add soy sauce and sweet soy sauce. Stir well.

    Add the soaked and drained rice vermicelli and scrambled egg. Toss well to coat the noodles evenly.

    Add bean sprouts. Stir-fry for 1 minute until bean sprouts are just tender.

    Season with salt and black pepper to taste. Add a splash of water if needed.

    Serve hot, garnished with chopped spring onions.
