- Mee Siam paste (store-bought)4 tbsp
- Chicken stock600ml
- Sugar1 tbsp
- Saltto taste
- Vegetable oil1 tbsp
- Eggs2
- Bean sprouts100g
- Spring onions2 stalks
- Lime1

Soak rice vermicelli in warm water until softened, then drain.

Heat vegetable oil in a pot. Add the Mee Siam paste and stir-fry for 1 minute until fragrant.

Pour in chicken stock and bring to a boil. Simmer for 5 minutes.

Season with sugar and salt to taste.

Make a thin omelette and shred it. Chop spring onions. Blanch bean sprouts.
