    Boil the Mee Kolok noodles in salted water according to package instructions until al dente. Drain and rinse briefly with cold water. Set aside.

    In a bowl, mix light soy sauce, dark soy sauce, oyster sauce, sesame oil, white vinegar, and chicken broth. This is your sauce base.

    Heat vegetable oil in a wok or pan over medium-high heat. Sauté chopped shallots and minced garlic until fragrant.

    Add the minced chicken or pork to the wok. Stir-fry until cooked through and lightly browned. Season with salt and black pepper.
