    Boil beef shank and beef bones in water for 10 minutes to remove impurities. Drain and rinse.

    In a large pot, combine the blanched beef shank, beef bones, star anise, cinnamon stick, cardamom pods, cloves, ginger (sliced), garlic (smashed), shallots (halved), turmeric powder, coriander powder, soy sauce, salt, and water. Bring to a boil, then reduce heat and simmer for at least 1.5 to 2 hours, or until the beef shank is very tender.

    Remove the beef shank from the broth. Let it cool slightly, then slice thinly against the grain. Strain the broth to remove solids.

    Cook the yellow noodles according to package directions. Drain and divide among serving bowls.

    Blanch the bean sprouts briefly. Divide them among the serving bowls.

    Ladle the hot beef broth over the noodles and bean sprouts. Add the sliced beef shank.

    Garnish with fresh cilantro and fried shallots. Serve immediately with lime wedges and sambal chili paste on the side.
