    Prepare pandan juice: Blend fresh pandan leaves with a little water and strain to get about 130ml of fragrant juice.

    Make the dough: In a bowl, mix rice flour and salt. Gradually add the pandan juice, mixing until a soft, pliable dough forms. Knead briefly until smooth.

    Prepare the steamer: Line a steamer with banana leaves or parchment paper. Bring water to a boil.

    Shape the Putu Mayam: Fill a Putu Mayam mould or a piping bag with a star nozzle with the dough. Pipe the dough onto the prepared steamer in small, circular patterns.

    Steam the Putu Mayam: Steam for 5-7 minutes until cooked through and the color intensifies slightly.

    Prepare the palm sugar syrup: In a saucepan, combine palm sugar, water, and pandan leaves (if using). Heat gently, stirring until the sugar dissolves. Simmer for a few minutes until slightly thickened. Strain if necessary.
