Cut chicken thighs into bite-sized cubes. Soak bamboo skewers in water for at least 30 minutes.

Prepare the marinade: Blend shallots, garlic, ginger, turmeric, coriander, cumin, lemongrass (bruised), and kaffir lime leaves until smooth. Mix with coconut milk, palm sugar, tamarind paste, soy sauce, salt, and pepper.

Marinate the chicken cubes in the mixture for at least 30 minutes, or preferably 2-4 hours in the refrigerator.

Thread the marinated chicken onto the soaked skewers.

Prepare the peanut sauce: Sauté shallots and garlic in vegetable oil until fragrant. Add peanut butter, coconut milk, water, palm sugar, tamarind paste, and soy sauce. Simmer until thickened. Season with salt and pepper.

Grill the chicken skewers over medium-high heat (or in a preheated oven at 200°C/400°F) for 8-10 minutes, turning occasionally, until cooked through and slightly charred.

Serve the grilled satay ayam hot, drizzled with peanut sauce and garnished with fresh cilantro and a lime wedge.
