  • Bamboo skewers20
  • Peanut butter (smooth)100g
  • Soy sauce3 tbsp
  • Honey or brown sugar2 tbsp
  • Garlic powder1 tsp
  • Ginger powder0.5 tsp
  • Lime juice1 tbsp
  • Coconut milk (canned)100ml
  • Chili flakes (optional)0.5 tsp
  • Saltto taste
  • Black pepperto taste

    Cut chicken thighs into bite-sized cubes.

    Soak bamboo skewers in water for at least 30 minutes.

    Prepare the marinade: In a bowl, combine soy sauce, honey, garlic powder, ginger powder, lime juice, and chili flakes (if using). Add chicken cubes and mix well. Marinate for at least 30 minutes at room temperature, or 1 hour in the refrigerator.

    Thread the marinated chicken onto the skewers.

    Prepare the quick peanut sauce: In a small saucepan, whisk together peanut butter, coconut milk, a little water (to thin), honey, and a pinch of salt. Heat gently until smooth and slightly thickened. Do not boil.
