- Fresh white fish fillets (e.g., mackerel, sea bass, snapper)500g
- Lime juice100ml
- Red onions2 medium
- Red chilies2-3
- Sarawak black pepper (freshly ground)1 tsp
- Saltto taste
- Cilantro (coriander leaves)a handful

Slice the fresh fish fillets very thinly against the grain. Place in a glass or ceramic bowl.

Pour the lime juice over the fish. Ensure all pieces are submerged. Let it marinate for about 10-15 minutes, or until the fish turns opaque and is 'cooked' by the acidity.

While the fish marinates, thinly slice the red onions and chilies (remove seeds if you prefer less heat). Chop the cilantro.

Drain most of the lime juice from the fish, leaving a small amount for dressing.

Add the sliced onions, chilies, and chopped cilantro to the bowl with the fish. Season with freshly ground Sarawak black pepper and salt to taste.
