Bahan
- Tuhau stems500g
- Dried chilies5-10
- Garlic cloves4
- Shallots2
- Belacan (shrimp paste)1 tsp
- Vegetable oil2 tbsp
- Saltto taste
- Water2 tbsp

Wash and thinly slice the tuhau stems. If they are very fibrous, you can lightly pound them.

Soak dried chilies in hot water until softened, then deseed and blend into a paste with garlic and shallots.

Heat vegetable oil in a wok or large pan over medium-high heat. Add the chili-garlic-shallot paste and belacan. Stir-fry until fragrant.

Add the sliced tuhau stems to the wok. Stir-fry for 3-5 minutes until the tuhau is slightly softened but still retains some crunch.

Add salt to taste and a splash of water if the mixture seems too dry. Continue to stir-fry for another minute.
