A traditional Yemeni dish featuring tender, slow-cooked chicken served over fragrant, spiced rice. The chicken is typically roasted or grilled after marination, imparting a smoky flavor, while the rice is infused with a unique blend of spices and often garnished with nuts and raisins.

- Chicken1 whole chicken, cut into pieces
- Basmati rice2 cups
- Onion1 large, finely chopped
- Garlic4 cloves, minced
- Ginger1 inch, grated
- Tomatoes2, pureed
- Vegetable oil1/4 cup
- Chicken broth or water3 cups
- Mandy spice mix2 tbsp (cumin, coriander, turmeric, cardamom, cloves, cinnamon)
- Saffron threadsa pinch, soaked in warm water
- Raisins1/4 cup
- Slivered almonds1/4 cup, fried
- Fresh parsleyfor garnish
- Saltto taste
- Black pepperto taste

Marinate chicken pieces with half of the Mandy spice mix, salt, and pepper for at least 30 minutes.

In a large pot, heat oil and sauté chopped onion until golden. Add minced garlic and grated ginger, cook for 1 minute until fragrant.

Add tomato puree and the remaining Mandy spice mix. Cook for 5 minutes, stirring occasionally.

Add rinsed basmati rice to the pot and stir to coat with the spice mixture. Cook for 2 minutes.

Pour in chicken broth or water, add salt and pepper. Bring to a boil.

Arrange marinated chicken pieces on top of the rice. Cover the pot tightly.

Reduce heat to low and simmer for 25-30 minutes, or until rice is cooked and chicken is tender.

While rice is cooking, optionally roast or grill the chicken pieces separately for a smoky flavor until cooked through.

Once rice is cooked, gently fluff it with a fork. Stir in soaked saffron water and raisins.

Serve the rice on a large platter, topped with the cooked chicken. Garnish with fried slivered almonds and fresh parsley.
