- Chicken thighs1.5 lbs, boneless, skinless, cut into pieces
- Basmati rice1.5 cups
- Onion1 medium, finely chopped
- Garlic2 cloves, minced
- Vegetable oil2 tbsp
- Chicken broth or water2.5 cups
- Pre-made Mandy spice mix or Shawarma spice mix1.5 tbsp
- Turmeric powder1/2 tsp
- Raisins2 tbsp
- Chopped cilantrofor garnish
- Saltto taste
- Black pepperto taste

Season chicken pieces with salt, pepper, and half of the spice mix. Pan-sear in a little oil until browned on all sides. Set aside.

In the same pot, heat remaining oil and sauté chopped onion until softened. Add minced garlic and cook for 1 minute.

Add rinsed basmati rice, the remaining spice mix, and turmeric powder. Stir for 1 minute.

Pour in chicken broth or water, add salt and pepper. Bring to a boil.

Return the seared chicken pieces to the pot, nestling them into the rice. Add raisins.

Cover tightly and simmer on low heat for 20-25 minutes, or until rice is cooked and chicken is tender.
