- Smoked chicken1 whole chicken, cut into pieces, or 4 smoked chicken legs/thighs
- Basmati rice2 cups
- Onion1 medium, finely chopped
- Garlic3 cloves, minced
- Vegetable oil2 tbsp
- Chicken broth or water3 cups
- Mandy spice mix1.5 tbsp
- Ground cumin1 tsp
- Ground coriander1 tsp
- Turmeric powder1/2 tsp
- Saffron threadsa pinch, soaked in warm water
- Toasted pine nuts2 tbsp
- Fresh mint leavesfor garnish
- Saltto taste
- Black pepperto taste

If using uncooked chicken, smoke or roast it until almost cooked through. If using pre-smoked chicken, ensure it's ready to serve.

In a pot, heat oil and sauté chopped onion until translucent. Add minced garlic and cook for 1 minute.

Add rinsed basmati rice, Mandy spice mix, cumin, coriander, and turmeric. Stir for 2 minutes.

Pour in chicken broth or water, add salt and pepper. Bring to a boil.

Arrange the smoked chicken pieces on top of the rice. Cover the pot tightly.

Reduce heat to low and simmer for 25-30 minutes, or until rice is fully cooked. The chicken will finish cooking and infuse the rice.

Gently fluff the rice with a fork. Stir in the soaked saffron water.
