- Pre-cooked chicken breast500g, diced
- Onion1 large, chopped
- Garlic2 cloves, minced
- Pre-made Kabsa spice mix2 tbsp
- Canned diced tomatoes1 can (400g)
- Chicken broth3 cups
- Bell pepper1, diced
- Dried cranberries1/4 cup
- Vegetable oil2 tbsp
- Fresh cilantro2 tbsp, chopped

Rinse the basmati rice thoroughly and drain.

In a large pot or skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.

Add the minced garlic and pre-made Kabsa spice mix, sauté for 1 minute until fragrant.

Stir in the canned diced tomatoes and diced bell pepper. Cook for 5 minutes.

Add the pre-cooked chicken and dried cranberries to the pot. Stir to combine.

Pour in the chicken broth, add salt and black pepper. Bring to a simmer.

Add the rinsed basmati rice to the pot. Stir well, ensuring the rice is submerged. Bring back to a simmer.

Reduce heat to low, cover tightly, and cook for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
