  • Pre-cooked chicken breast500g, diced
  • Onion1 large, chopped
  • Garlic2 cloves, minced
  • Pre-made Kabsa spice mix2 tbsp
  • Canned diced tomatoes1 can (400g)
  • Chicken broth3 cups
  • Bell pepper1, diced
  • Dried cranberries1/4 cup
  • Vegetable oil2 tbsp
  • Fresh cilantro2 tbsp, chopped
  • Saltto taste
  • Black pepperto taste

    Rinse the basmati rice thoroughly and drain.

    In a large pot or skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.

    Add the minced garlic and pre-made Kabsa spice mix, sauté for 1 minute until fragrant.

    Stir in the canned diced tomatoes and diced bell pepper. Cook for 5 minutes.

    Add the rinsed basmati rice to the pot. Stir well, ensuring the rice is submerged. Bring back to a simmer.
