- Basmati rice2 cups
- Frozen mixed vegetables (e.g., peas, carrots, corn)2 cups

- Garlic3 cloves
- Chicken broth3 cups
- Vegetable oil1/4 cup
- Maqlubah spice mix2 tsp
- Saltto taste
- Black pepperto taste
- Chopped cilantro2 tbsp

Cut chicken into bite-sized pieces. Season with salt, pepper, and maqlubah spice mix. Sauté chicken in oil until browned. Remove from pot.

In the same pot, sauté chopped onion and minced garlic until softened.

Add the frozen mixed vegetables and cook for 5 minutes.

Rinse basmati rice until water runs clear. Drain well.

Return the chicken to the pot. Add the rinsed rice and stir to combine with vegetables and chicken.

Pour in the chicken broth. Season with salt and pepper. Bring to a boil.

Reduce heat to low, cover tightly, and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
