- Soy sauce1 tbsp
- Vegetable oil2 tbsp
- Saltto taste

Prepare the omelets: Whisk 2 eggs with salt and pepper. Heat 1/2 tbsp oil in a non-stick pan. Pour in egg mixture, cook until set, slide onto a plate. Repeat with the remaining egg.

Heat remaining oil in a wok or large skillet over medium-high heat. Add chopped onion and sauté until softened. Add minced garlic and stir-fry for 30 seconds.

Add diced chicken and stir-fry until cooked through. Add frozen mixed vegetables and cook until tender.
