- Cooked rice4 cups
- Mixed seafood (shrimp, squid, fish chunks)250g
- Onion, chopped1/2
- Garlic, minced2 cloves
- Tom Yam paste2-3 tbsp
- Eggs2
- Red bell pepper, diced1/2
- Lime juice1 tbsp
- Soy sauce1 tbsp
- Vegetable oil2 tbsp
- Fresh parsley or cilantro, chopped (for garnish)a small bunch

Heat 1 tbsp of oil in a wok or large skillet. Scramble the eggs, then set aside.

Add the remaining 1 tbsp of oil. Sauté onion and garlic until softened.

Add the mixed seafood and red bell pepper. Cook until seafood is cooked through.

Stir in the Tom Yam paste and cook for 1 minute until fragrant.

Add the cooked rice, soy sauce, and lime juice. Stir-fry until well combined and heated through.
