  • Shrimp, peeled and deveined200g
  • Squid, cleaned and sliced150g
  • Shallots, thinly sliced5
  • Garlic, minced3 cloves
  • Red chilies, thinly sliced3
  • Lemongrass, finely chopped (white part only)1 stalk
  • Lime leaves, finely sliced2
  • Lime juice1 tbsp
  • Sweet soy sauce (Kecap Manis)3 tbsp
  • Shrimp paste (Terasi/Belacan)1 tsp
  • Vegetable oil3 tbsp
  • Eggs, fried4
  • Cucumber, sliced1/2
  • Saltto taste
  • Black pepperto taste

    Prepare Sambal Matah: In a bowl, combine thinly sliced shallots, chilies, minced garlic, chopped lemongrass, sliced lime leaves, lime juice, and a pinch of salt. Mix well and set aside.

    Pound or blend shrimp paste until smooth.

    Heat vegetable oil in a wok or large skillet over medium-high heat. Sauté shallots until softened, about 2 minutes.

    Add garlic and pound shrimp paste, stir-fry until fragrant.

    Add shrimp and squid, cook until almost done.

    Add the cooked rice and sweet soy sauce. Stir well to combine.

    Season with salt and black pepper to taste. Stir-fry until heated through.
