- Shredded cooked chicken2 cups
- Curry powder2 tbsp
- Onion, finely chopped1/4 cup
- Garlic, minced2 cloves
- Chili paste (sambal oelek)2 tbsp
- Banana leaves8 medium pieces, wilted
- Cucumber, sliced1
- Fried shallots1/4 cup

Gently warm the cooked rice with coconut milk, water, and salt. Stir in fried shallots.

Prepare the chicken filling: Sauté chopped onion and minced garlic until softened. Add shredded cooked chicken and curry powder. Stir in sambal oelek and cook for 5 minutes until heated through and fragrant. Add a splash of water if too dry.

Assemble the Nasi Tumpang: Lay out a wilted banana leaf. Place a portion of the seasoned rice in the center. Top with a spoonful of the chicken filling. Add a few slices of cucumber. Fold the banana leaf to create a parcel.
