- Chicken thighs1 kg
- Coconut milk400 ml
- Garlic5 cloves
- Ginger1 inch
- Onion1 medium
- Lemongrass2 stalks
- Kaffir lime leaves4 leaves
- Turmeric powder1 tsp
- Chili padi (optional)2-3
- Fish sauce2 tbsp
- Saltto taste
- Black pepperto taste
- Vegetable oil2 tbsp
- Cilantrofor garnish

Marinate chicken thighs with salt, pepper, and turmeric powder for at least 30 minutes.

Sauté minced garlic, ginger, and sliced onion in vegetable oil until fragrant and softened.

Add the marinated chicken and sear until lightly browned on all sides.

Bruise the lemongrass stalks and add them to the pot along with kaffir lime leaves and chili padi (if using).

Pour in the coconut milk and fish sauce. Bring to a simmer.

Cover and cook on low heat for 30-40 minutes, or until the chicken is tender and the sauce has thickened.
