- Shallots, sliced3
- Garlic, sliced4 cloves
- Galangal, sliced1 inch
- Lemongrass, bruised1 stalk
- Dried red chilies, soaked5-7
- Turmeric powder1 tsp
- Coriander powder1 tsp
- Shrimp paste (belacan)1/2 tsp
- Palm sugar1 tbsp
- Tamarind paste1 tbsp
- Saltto taste
- Black pepperto taste
- Cooking oil2 tbsp
- Chopped peanutsfor garnish
- Fresh mint leavesfor garnish

Blend shallots, garlic, galangal, and soaked dried red chilies into a paste.

Heat cooking oil in a pot. Add the blended paste and shrimp paste. Sauté until fragrant and oil separates.

Add the bone-in chicken thighs and sear them in the paste.

Pour in the coconut milk, bruised lemongrass, palm sugar, and tamarind paste. Stir to combine.
