Steam jasmine rice until fluffy.

For Ayam Kecap: Marinate chicken thighs with garlic, shallots, sweet soy sauce, salt, and pepper. Simmer until chicken is cooked through and sauce thickens.

For Sambal Terasi: Grind chili peppers, garlic, shallots, shrimp paste, and a pinch of salt. Sauté in oil until fragrant. Add chopped tomato and cook until softened. Season with salt and a squeeze of lime.

For Tempe Goreng: Slice tempeh thinly. Marinate with salt, pepper, coriander powder, and turmeric powder. Deep-fry until golden brown and crispy.

For Ikan Goreng: Cut fish fillets into pieces. Season with salt, pepper, and a squeeze of lime. Fry until golden and cooked through.

Assemble Nasi Ambeng Jawa on a platter lined with banana leaves: place rice in the center and arrange Ayam Kecap, Sambal Terasi, Tempe Goreng, and Ikan Goreng around it.
