- Chicken pieces (boneless thighs or breast)500g
- Pre-made kerisik paste4 tbsp
- Chili paste (sambal oelek or similar)1-2 tbsp (to taste)
- Garlic, minced2 cloves
- Ginger, grated1 tsp
- Coconut milk150ml
- Tamarind paste1 tbsp
- Saltto taste
- Wateras needed
- Vegetable oil2 tbsp
- Sliced red chilies (for garnish)a few
- Cilantro leaves (for garnish)a few sprigs

Heat vegetable oil in a pan or wok. Sauté minced garlic and grated ginger until fragrant.

Add the chili paste and pre-made kerisik paste. Stir well and cook for 2 minutes.

Add the chicken pieces and stir-fry until lightly browned on all sides.

Pour in the coconut milk and tamarind paste. Add salt and a splash of water if needed. Bring to a simmer.

Cover and cook for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.

Adjust seasoning if necessary. Garnish with sliced red chilies and cilantro leaves before serving.
