- Beef cubes (chuck or brisket)500g
- Fresh turmeric root50g
- Galangal20g
- Lemongrass stalks2 stalks
- Shallots150g
- Garlic cloves5 cloves
- Red chilies3-5
- Candlenuts5
- Coconut milk200ml
- Tamarind paste1 tbsp
- Kaffir lime leaves3 leaves
- Saltto taste
- Black pepperto taste
- Vegetable oil2 tbsp
- Water100ml

Prepare the spice paste: Peel and roughly chop fresh turmeric, galangal, shallots, garlic, red chilies, and candlenuts. Bruise the lemongrass stalks.

Blend the spice paste ingredients with a little water until smooth. Set aside.

Heat vegetable oil in a pot or wok over medium heat. Add the spice paste and bruised lemongrass. Sauté until fragrant and the oil separates, about 8-10 minutes.

Add the beef cubes to the pot and stir well to coat with the spice paste. Cook until the beef is browned on all sides.

Pour in the coconut milk and tamarind paste. Add kaffir lime leaves. Stir to combine.

Add water, salt, and black pepper. Bring to a simmer, then reduce heat to low, cover, and cook for 45-60 minutes, or until the beef is tender and the sauce has thickened.
