- Beef cubes (shank or stewing beef)500g
- Fresh turmeric root40g
- Galangal15g
- Lemongrass stalks1 stalk
- Shallots100g
- Garlic cloves4 cloves
- Bird's eye chilies5-7 (or to taste)
- Dried chili flakes1 tsp
- Candlenuts4
- Coconut milk250ml
- Tamarind paste1.5 tbsp
- Kaffir lime leaves2 leaves
- Saltto taste
- Black pepperto taste
- Cooking oil2 tbsp
- Water150ml

Prepare the spice paste: Peel and chop fresh turmeric, galangal, shallots, garlic, bird's eye chilies, and candlenuts. Bruise the lemongrass stalk.

Blend the spice paste ingredients with a little water until smooth. Set aside.

Heat cooking oil in a pot over medium heat. Add the spice paste, bruised lemongrass, and dried chili flakes. Sauté until fragrant and the oil separates, about 7-9 minutes.

Add the beef cubes and stir to coat. Cook until the beef is browned.

Pour in coconut milk, tamarind paste, and water. Add kaffir lime leaves. Stir well.

Season with salt and black pepper. Bring to a simmer, then cover and cook on low heat for 50-70 minutes, or until the beef is very tender and the sauce has thickened.
