- Chili paste (sambal oelek)2 tbsp
- Tomatoes2 large, pureed
- Ketchup3 tbsp
- Sugar2 tbsp

- Star anise2
- Cinnamon stick1
- Cloves3
- Cardamom pods2
- Water1/2 cup
- Cilantro leavesfor garnish

Blend onions, garlic, ginger, and soaked dried chilies into a smooth paste.

Heat vegetable oil in a pot or wok over medium heat. Add star anise, cinnamon stick, cloves, and cardamom pods. Sauté until fragrant.

Add the blended chili paste and cook until the oil separates and the paste darkens, about 10-15 minutes.

Stir in tomato paste and chili paste (sambal oelek). Cook for another 2 minutes.

Add the pureed tomatoes and cook until the sauce thickens.

Add chicken pieces to the pot. Stir well to coat the chicken with the sauce. Add water, ketchup, sugar, and salt. Mix thoroughly.

Bring to a boil, then reduce heat, cover, and simmer for 30-40 minutes, or until the chicken is cooked through and tender.
