- Lemongrass, finely chopped1 stalk
- Garlic, minced3 cloves
- Shallots, finely chopped2
- Tamarind paste (seedless)2 tbsp
- Coriander seeds, ground1 tbsp
- Cumin seeds, ground1 tsp
- Egg1
- Rice flour3 tbsp
- Saltto taste
- Black pepperto taste
- Vegetable oil, for deep fryingsufficient

In a blender or mortar, combine grated fresh turmeric, galangal, chopped lemongrass, minced garlic, and chopped shallots. Pound or blend into a paste.

In a large bowl, mix the chicken pieces with the spice paste, tamarind paste, ground coriander, and ground cumin. Ensure the chicken is well-coated.

Add the egg and rice flour to the marinade. Season with salt and black pepper. Mix thoroughly until a thick coating forms on the chicken.

Marinate the chicken for at least 1 hour in the refrigerator.
