- Chicken thighs, bone-in, skin-on1 kg
- Fresh ginger, thinly sliced100g
- Garlic, minced5 cloves
- Red chilies, sliced3-5
- Shallots, sliced2 medium
- Soy sauce3 tbsp
- Oyster sauce2 tbsp
- Dark soy sauce1 tbsp
- Sugar1 tsp
- Water1/2 cup
- Vegetable oil2 tbsp
- Saltto taste
- Black pepperto taste
- Cilantro, for garnisha handful

Cut chicken into bite-sized pieces. Marinate with salt and black pepper.

Heat vegetable oil in a wok or large pan over medium-high heat. Add sliced shallots and sauté until fragrant.

Add minced garlic, sliced ginger, and sliced red chilies. Stir-fry for about 1 minute until aromatic.

Add the marinated chicken pieces. Stir-fry until the chicken is browned on all sides.

Pour in soy sauce, oyster sauce, and dark soy sauce. Add sugar and water. Stir well to combine.
