- Chicken drumsticks or thighs600g
- Coconut milk500ml
- Lemongrass, bruised2 stalks
- Galangal, sliced1 inch piece
- Kaffir lime leaves5-6 leaves
- Fish sauce2 tbsp
- Palm sugar1 tbsp
- Turmeric powder1/2 tsp
- Cilantro, chopped (for garnish)2 tbsp
- Vegetable oil1 tbsp
- Saltto taste
- Water50ml
- Black pepperto taste

Heat vegetable oil in a pot over medium heat. Add bruised lemongrass and sliced galangal, sauté until fragrant.

Add chicken pieces and sear lightly on all sides.

Pour in coconut milk and water. Add kaffir lime leaves, fish sauce, palm sugar, and turmeric powder. Stir well.

Bring to a simmer, then reduce heat, cover, and cook for 30-40 minutes, or until chicken is tender and cooked through.

Remove lemongrass stalks and galangal slices before serving. Season with salt and black pepper to taste.
