- Chicken breast, cubed500 g
- Carrots, sliced150 g
- Coconut milk400 ml
- Malaysian or Thai red curry paste3 tbsp
- Garlic, minced2 cloves
- Ginger, grated1 cm piece
- Vegetable oil2 tbsp
- Saltto taste
- Black pepperto taste
- Water100 ml
- Lime juice1 tbsp
- Green onions, chopped, for garnisha few

Heat vegetable oil in a pot over medium heat. Sauté minced garlic and grated ginger until fragrant.

Add the curry paste and cook for 1-2 minutes, stirring constantly, until fragrant.

Add the cubed chicken breast and cook until lightly browned on all sides.

Add the sliced carrots, coconut milk, and water. Bring to a simmer.

Reduce heat to low, cover, and simmer for 20-25 minutes, or until the chicken is cooked through and carrots are tender.
