- Coconut milk400ml
- Onion1 medium
- Garlic cloves2
- Ginger1 inch piece
- Curry powder2 tbsp
- Vegetable oil1 tbsp
- Saltto taste
- Wateras needed

Boil eggs until hard-boiled, peel, and set aside. Halve them just before serving.

Finely chop onion, mince garlic and ginger. Heat oil in a pan and sauté onion until softened.

Add minced garlic and ginger, cook for 30 seconds until fragrant. Stir in curry powder and cook for 1 minute.

Pour in coconut milk and bring to a simmer. Add salt. Cook for 5 minutes, stirring occasionally.

Add the hard-boiled eggs (whole or halved) to the sauce. Simmer for 5-10 minutes to heat through and absorb flavor.
