- Glass noodles (Mien)200g

Prepare the duck: Clean the duck pieces. Blanch them in boiling water for 5 minutes, then rinse under cold water. This removes impurities.

Prepare the herbal sachet: Rinse the dried Chinese medicinal herbs. Place them in a cheesecloth or mesh bag.

Prepare aromatics: Lightly char the ginger and shallots. Peel and smash the ginger. Peel and smash the shallots.

Simmer the broth: In a large pot, combine the duck pieces, herbal sachet, charred ginger, charred shallots, star anise, and cinnamon stick. Add water to cover generously. Bring to a boil, then reduce heat and simmer for at least 1.5 - 2 hours, or until the duck is very tender and the broth is rich.

Strain and season: Remove the duck pieces and set aside. Strain the broth to remove solids. Skim off excess fat if desired. Season the broth with salt and black pepper to taste.

Prepare the glass noodles: Soak the glass noodles in warm water according to package instructions until softened. Drain well.

Assemble the soup: Shred or cut the cooked duck meat into bite-sized pieces. Divide the soaked glass noodles among serving bowls. Top with duck meat. Ladle the hot, seasoned herbal broth over the noodles and duck.

Garnish: Chop the scallions and cilantro finely. Garnish the soup with the fresh herbs.
