- Chicken thighs, bone-in, skin-on1 kg
- Lemongrass, finely chopped4 stalks
- Garlic, minced4 cloves
- Shallots, minced2
- Bird's eye chilies, sliced2-3
- Fish sauce4 tbsp
- Sugar2 tbsp
- Soy sauce1 tbsp
- Vegetable oil2 tbsp
- Water1/2 cup
- Saltto taste
- Black pepperto taste
- Cilantro, for garnisha few sprigs

Cut chicken thighs into bite-sized pieces. Marinate chicken with 2 tbsp fish sauce, 1 tbsp sugar, minced garlic, minced shallots, and black pepper for at least 15 minutes.

Prepare lemongrass by removing tough outer layers and finely chopping the tender inner part. Slice chilies.

Heat vegetable oil in a pot or deep skillet over medium-high heat. Add chopped lemongrass and sauté until fragrant, about 2-3 minutes.

Add the marinated chicken to the pot and sear on all sides until lightly browned.

Add the remaining fish sauce, sugar, soy sauce, sliced chilies, and water. Stir well to combine.

Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes, or until the chicken is tender and the sauce has thickened.

Taste and adjust seasoning with salt, pepper, fish sauce, or sugar if needed.
