  • Dried cordyceps10g
  • Dried goji berries20g
  • Dried jujubes (red dates)30g
  • Ginger30g, sliced
  • Scallions2 stalks, cut into sections
  • Water2 liters
  • Saltto taste
  • Black pepperto taste

    Soak dried shiitake mushrooms and cordyceps in warm water for at least 30 minutes until rehydrated. Reserve the soaking liquid from shiitake if desired for extra flavor.

    Rinse the black chicken and blanch it in boiling water for 5 minutes. Drain and rinse under cold water.

    Rinse goji berries and jujubes.

    Place the blanched chicken in a large pot. Add the rehydrated shiitake mushrooms (halved if large), cordyceps, goji berries, jujubes, ginger, and scallions.

    Pour in 2 liters of water (and optional shiitake soaking liquid). Bring to a boil.

    Reduce heat to low, cover, and simmer for 2 to 2.5 hours, or until the chicken is tender.
