- Tamarind paste100g
- Garlic4 cloves
- Shallots2 medium
- Fish sauce3 tbsp
- Sugar3 tbsp
- Chili1-2
- Vegetable oilfor frying
- Cornstarch2 tbsp
- Saltto taste
- Black pepperto taste
- Water50 ml
- Cilantrofor garnish

Marinate chicken wings with salt and pepper.

Heat vegetable oil in a wok or deep fryer to 170°C (340°F).

Toss marinated wings in cornstarch until lightly coated.

Fry chicken wings in batches until golden brown and cooked through. Drain and set aside.

Prepare the sauce: Mince garlic and shallots. Finely chop chili.

In a pan, sauté minced garlic and shallots until fragrant.

Add tamarind paste, fish sauce, sugar, chopped chili, and water. Stir well and simmer until the sauce thickens slightly.
