- Chicken wings1 kg
- Fish sauce4 tbsp
- Sugar2 tbsp
- Garlic4 cloves, minced
- Shallots2, minced
- Chili peppers1-2, sliced (optional)
- Vegetable oilfor frying
- Salt1 tsp
- Black pepper1/2 tsp
- Water2 tbsp
- Cornstarch or rice flour3 tbsp
- Cilantrofor garnish

Pat chicken wings dry. Season with salt and pepper.

Toss wings with cornstarch or rice flour until lightly coated.

Heat vegetable oil in a wok or deep pan over medium-high heat. Fry wings in batches until golden brown and cooked through (about 8-10 minutes). Drain on paper towels.

In a separate pan, heat 1 tbsp of oil over medium heat. Sauté minced garlic and shallots until fragrant.

Add fish sauce, sugar, and water to the pan. Stir until sugar dissolves and the sauce thickens slightly.

Add the fried chicken wings to the sauce. Toss well to coat evenly. Add sliced chili peppers if using.

Cook for another 1-2 minutes until the glaze is sticky and coats the wings.
