- Vietnamese coriander (rau răm)1 cup, chopped
- Purple onion1/2, thinly sliced
- Mint leaves1/4 cup, chopped
- Fish sauce3 tbsp
- Sugar1.5 tbsp
- Rice vinegar1 tbsp
- Garlic1 clove, minced
- Bird's eye chili1-2, finely chopped
- Fried shallots2 tbsp
- Saltto taste
- Black pepperto taste

Boil chicken thighs in water with a pinch of salt and pepper until cooked. Drain, cool, and shred.

In a small bowl, combine fish sauce, sugar, rice vinegar, minced garlic, and chopped chili. Stir until sugar dissolves.

In a large bowl, combine shredded chicken, thinly sliced purple onion, chopped Vietnamese coriander, and chopped mint leaves.

Pour the dressing over the chicken mixture and toss gently.

Allow the salad to marinate for about 10 minutes.
