  • Purple onion1/2, thinly sliced
  • Mint leaves1/4 cup, chopped
  • Fish sauce3 tbsp
  • Sugar1.5 tbsp
  • Rice vinegar1 tbsp
  • Garlic1 clove, minced
  • Bird's eye chili1-2, finely chopped
  • Fried shallots2 tbsp
  • Saltto taste
  • Black pepperto taste
  • Waterfor boiling

    Boil chicken thighs in water with a pinch of salt and pepper until cooked. Drain, cool, and shred.
