- Duck breast or thigh500g
- Coconut milk200ml
- Lemongrass2 stalks
- Garlic3 cloves
- Shallots1 large
- Ginger1 inch piece
- Chili peppers1-2
- Fish sauce2 tbsp
- Sugar1 tsp
- Turmeric powder1/2 tsp
- Curry powder1 tsp
- Vegetable oil2 tbsp
- Cilantrofor garnish
- Saltto taste
- Black pepperto taste

Cut duck into bite-sized pieces. Marinate with fish sauce, sugar, turmeric powder, curry powder, salt, and pepper for at least 15 minutes.

Finely mince garlic and shallots. Bruise and chop lemongrass. Slice chili peppers.

Heat vegetable oil in a wok or large skillet over medium-high heat. Add minced garlic, shallots, and lemongrass. Stir-fry until fragrant.

Add marinated duck pieces to the wok. Stir-fry until the duck is browned and almost cooked through.

Pour in coconut milk and add sliced chili peppers. Bring to a simmer and cook for 5-7 minutes, or until the sauce thickens and the duck is fully cooked.

Adjust seasoning with salt and pepper if needed. Stir in a splash of water if the sauce is too thick.

Garnish with fresh cilantro and serve hot.
