- Soy sauce2 tbsp
- Sesame oil1 tbsp
- Cornstarch1 tbsp

Boil egg noodles according to package directions until al dente. Drain, rinse with cold water, and pat dry thoroughly. Toss with 1 tbsp vegetable oil to prevent sticking.

Heat about 2 inches of vegetable oil in a wok or deep pot to 350°F (175°C). Carefully fry the noodles in batches until golden brown and crispy. Drain on paper towels.

Prepare the stir-fry sauce: In a small bowl, whisk together oyster sauce, soy sauce, sesame oil, cornstarch, and 1/4 cup water. Set aside.

Clean and prepare the seafood: peel and devein shrimp, clean squid and cut into rings, slice fish cake. Chop broccoli into florets, julienne carrots, trim snow peas. Mince garlic and ginger.

Heat 2 tbsp vegetable oil in a clean wok over high heat. Add minced garlic and ginger, stir-fry until fragrant (about 30 seconds).

Add shrimp, squid, and fish cake to the wok. Stir-fry for 2-3 minutes until the seafood is almost cooked through.

Add broccoli, carrots, and snow peas. Stir-fry for another 2-3 minutes until vegetables are tender-crisp.

Give the sauce mixture a stir and pour it into the wok. Cook, stirring constantly, until the sauce thickens and coats the ingredients.

Season with salt and black pepper to taste.

To serve, place a generous portion of crispy fried noodles on each plate. Spoon the seafood and vegetable stir-fry over the noodles. Garnish with fresh cilantro and serve immediately with lime wedges.
