  • Shiitake mushrooms100g
  • Carrots1 medium
  • Scallions3 stalks
  • Garlic3 cloves
  • Ginger1 inch piece
  • Fish sauce3 tbsp
  • Oyster sauce1 tbsp
  • Soy sauce1 tbsp
  • Sesame oil1 tsp
  • Vegetable oil2 tbsp
  • Saltto taste
  • Black pepperto taste
  • Water1/4 cup
  • Cilantrofor garnish
  • Chopped peanutsfor garnish

    Soak glass noodles in warm water for 10-15 minutes until softened. Drain and cut into shorter lengths.

    Clean and prepare vegetables: thinly slice shiitake mushrooms, julienne carrots, chop scallions (separate white and green parts). Mince garlic and ginger.

    In a small bowl, whisk together fish sauce, oyster sauce, soy sauce, sesame oil, and 1/4 cup water. Set aside.

    Heat 1 tbsp vegetable oil in a large wok or skillet over medium-high heat. Add minced garlic and ginger, sauté until fragrant (about 30 seconds).

    Add the white parts of the scallions and shiitake mushrooms. Stir-fry for 2-3 minutes until mushrooms soften.

    Add the julienned carrots and stir-fry for another 2 minutes until slightly tender-crisp.

    Push the vegetables to one side of the wok. Add the remaining 1 tbsp vegetable oil to the empty side. Add the drained glass noodles and stir-fry for 1-2 minutes to heat through.

    Add the fresh crab meat to the wok. Stir gently to combine with noodles and vegetables. Be careful not to break up the crab meat too much.

    Pour the prepared sauce mixture over the noodles and crab. Toss everything together until the noodles are evenly coated and heated through (about 3-5 minutes). Season with salt and black pepper to taste.

    Stir in the green parts of the scallions. Remove from heat.

    Serve immediately, garnished with fresh cilantro and chopped peanuts.
