- Soy sauce2 tbsp
- Fish sauce1 tbsp
- Sugar1 tsp
- Sesame oil1 tsp
- Vegetable oil2 tbsp

- Sliced chilifor garnish

Soak glass noodles in warm water for 10-15 minutes until softened. Drain and cut into shorter lengths if desired.

Prepare the seafood: peel and devein shrimp, clean squid and cut into rings, clean scallops. Marinate seafood with a pinch of salt, pepper, and 1 tsp of oyster sauce.

Prepare vegetables: julienne carrots, slice bell pepper, cut broccoli into small florets. Mince garlic and shallots.

In a small bowl, whisk together oyster sauce, soy sauce, fish sauce, sugar, and sesame oil for the sauce. Add a splash of water if too thick.

Heat vegetable oil in a wok or large skillet over medium-high heat. Add minced garlic and shallots and stir-fry until fragrant (about 30 seconds).

Add the marinated seafood to the wok and stir-fry until they are almost cooked through (shrimp turn pink, squid opaque). Remove seafood from the wok and set aside.

Add carrots, bell pepper, and broccoli to the wok. Stir-fry for 2-3 minutes until vegetables are tender-crisp.

Add the drained glass noodles to the wok. Pour the prepared sauce over the noodles and vegetables. Toss well to coat everything evenly.

Return the cooked seafood to the wok. Stir-fry for another 1-2 minutes until everything is heated through and well combined.

Season with salt and pepper to taste. Serve immediately, garnished with fresh cilantro and sliced chili.
