Prepare the filling: Mix sweetened red bean paste (or black sesame paste) with dried shredded coconut and 50g sugar. If using red bean paste, stir in some toasted black sesame seeds for authenticity.

Prepare the dough: In a bowl, combine glutinous rice flour and salt. Add lá gai extract/paste and gradually mix in warm water until a smooth, pliable dough forms. Knead briefly.
