- Shallots1

- Fish sauce2 tbsp
- Sugar1 tsp
- Soy sauce1 tbsp
- Water50ml
- Vegetable oil2 tbsp
- Saltto taste
- Black pepperto taste
- Cilantrofor garnish
- Red chiliesfor garnish

Mince shallots and garlic. In a bowl, combine ground pork with minced shallots, garlic, fish sauce, sugar, soy sauce, salt, and pepper. Mix well.

Heat 1 tbsp of vegetable oil in a cast-iron skillet or small pan over medium-high heat. Add the pork mixture and cook, breaking it up, until browned and cooked through. Add water and simmer for 2-3 minutes to create a sauce.

Push the pork mixture to one side of the skillet. Add the remaining 1 tbsp of oil to the other side and crack the eggs into the skillet. Fry the eggs to your desired doneness (sunny-side up is traditional).

Arrange slices of Vietnamese pork sausage and dollops of pâté around the eggs in the skillet.

Garnish with fresh cilantro sprigs and sliced red chilies.

Slice the baguette and serve immediately with the hot skillet, using the bread to scoop up the sauce, eggs, and meat.
