- Beef stew meat1.5 lbs
- Carrots2 large
- Potatoes1 large
- Yellow onion1 medium
- Garlic3 cloves
- Lemongrass paste1 tbsp
- Ground ginger1 tsp
- Curry powder1.5 tbsp
- Fish sauce2 tbsp
- Tomato paste1 tbsp
- Sugar0.5 tsp
- Saltto taste
- Black pepperto taste
- Beef broth4 cups
- Vegetable oil1 tbsp
- Baguette1
- Green onionsfor garnish

Cut beef into 1-inch cubes. Season with salt and pepper.

Chop onion and mince garlic.

Heat oil in a pot over medium-high heat. Brown the beef cubes in batches. Remove and set aside.

Add onion to the pot and sauté until softened. Add garlic and cook for 30 seconds.

Stir in curry powder, lemongrass paste, ground ginger, and tomato paste. Cook for 1 minute.

Return beef to the pot. Add fish sauce, sugar, and beef broth. Bring to a boil.

Reduce heat, cover, and simmer for 45 minutes, or until beef is almost tender.

Add peeled and cubed carrots and potatoes. Continue simmering, covered, for another 20-25 minutes, until vegetables are tender.

Adjust seasoning with salt and pepper. Serve hot with baguette and chopped green onions.
