- Turmeric powder1 tsp
- Dill1/2 cup, chopped
- Spring onions1/4 cup, chopped
- Fish sauce2 tbsp
- Sugar1 tsp
- Vegetable oil3 tbsp
- Saltto taste
- Black pepperto taste

Process the snakehead fish fillet into a paste using a food processor. Add minced galangal, turmeric powder, chopped dill, spring onions, fish sauce, sugar, salt, and pepper. Mix well until combined.

Shape the fish paste into small patties or logs.

Heat vegetable oil in a non-stick pan over medium-high heat. Pan-fry the fish cakes until golden brown and cooked through on both sides.

Serve hot with vermicelli noodles, fresh herbs (dill, mint), roasted peanuts, and a side of Nuoc Cham dipping sauce.
