- Pre-shredded jicama400g
- Shredded coconut (unsweetened)80g
- Dried cranberries40g
- All-purpose flour120g
- Sugar80g
- Coconut milk150ml
- Water250ml
- Salt1/4 teaspoon
- Vegetable oil (for greasing)1 tablespoon

In a bowl, combine the pre-shredded jicama, shredded coconut, and dried cranberries. Add 40g of sugar and mix well.

In a separate bowl, whisk together all-purpose flour and salt.

Gradually whisk in the coconut milk and water until a smooth batter is formed. Stir in the remaining 40g of sugar.

Heat a non-stick skillet over medium heat. Lightly grease with oil.

Pour about 1/4 cup of batter into the pan, spreading it thinly. Cook for about 1 minute until set.

Flip the crepe and cook for another 20 seconds. Remove from pan.

Repeat with the remaining batter. Place a portion of the filling on each crepe and roll it up.

Serve immediately.
