- Mackerel fillets500g
- Ripe tomatoes300g
- Fish sauce3 tbsp
- Sugar1.5 tbsp
- Garlic3 cloves
- Shallots1 large
- Vegetable oil2 tbsp
- Water100 ml
- Black pepperto taste
- Saltto taste
- Scallions2 stalks

Prepare the mackerel fillets by rinsing and patting them dry. Cut into serving-sized pieces.

Chop the tomatoes into small pieces. Mince the garlic and shallots.

Heat vegetable oil in a clay pot or heavy-bottomed saucepan over medium heat. Sauté minced garlic and shallots until fragrant.

Add the chopped tomatoes and cook until softened, about 5 minutes.

Add fish sauce, sugar, and a pinch of salt. Stir well to combine.

Carefully arrange the mackerel pieces over the tomato mixture. Pour in the water.

Bring to a simmer, then reduce heat to low, cover, and braise for 20-25 minutes, or until the fish is cooked through and the sauce has thickened.
