- Sea scallops1 lb
- Scallions1 bunch
- Garlic2 cloves
- Vegetable oil1/4 cup
- Fish sauce1 tbsp
- Sugar1 tsp
- Saltto taste
- Black pepperto taste

Clean and pat dry the sea scallops.

Finely chop the white and light green parts of the scallions. Mince the garlic.

Heat vegetable oil in a small saucepan over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds. Do not let it burn.

Add the chopped scallions to the hot oil. Stir for about 1 minute until they wilt slightly and turn bright green. Remove from heat.

Stir in fish sauce and sugar into the scallion oil mixture. Season with a pinch of salt and pepper if needed. Set aside.

Season the scallops with salt and pepper.

Grill the scallops over medium-high heat for 2-3 minutes per side, until golden brown and cooked through. Alternatively, pan-sear them in a hot, lightly oiled skillet.
