- Fresh oysters, on the half shell24
- Butter3 tbsp
- Mayonnaise3 tbsp
- Grated Gruyere cheese1/2 cup
- Minced shallots2 tbsp
- Finely chopped scallions1/2 cup
- Vegetable oil3 tbsp
- Saltto taste
- Black pepperto taste
- Optional: Sliced chili peppers, for garnish1

Preheat grill or broiler.

Prepare the cheese topping: In a bowl, mix butter, mayonnaise, grated Gruyere cheese, and minced shallots. Season with salt and pepper.

Arrange oysters on the half shell on a baking sheet.

Spoon the cheese mixture onto each oyster.

Grill or broil for 6-8 minutes until cheese is melted and bubbly.

While oysters grill, prepare scallion oil: Heat vegetable oil in a small saucepan over medium heat. Add chopped scallions and cook for 1-2 minutes until fragrant and bright green. Do not overcook.
