Nguyên liệu

  • Fresh oysters24
  • Scallions2 cups, finely chopped
  • Garlic4 cloves, minced
  • Vegetable oil1/2 cup
  • Fish sauce2 tablespoons
  • Sugar1 teaspoon
  • Saltto taste
  • Black pepperto taste
  • Fried shallots1/4 cup, for garnish
  • Cilantro2 tablespoons, chopped, for garnish

Các bước

  1. 1

Preheat your grill or broiler to high heat.

  2. 2

Clean the oysters thoroughly under cold running water, scrubbing the shells.

  3. 3

Prepare the scallion oil: Heat vegetable oil in a small saucepan over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add chopped scallions, fish sauce, and sugar. Stir well and cook for 2-3 minutes until scallions are wilted and fragrant. Season with salt and pepper to taste. Remove from heat.

  4. 4

Place the oysters directly on the grill grates or under the broiler, cupped side down. Grill for 5-8 minutes, or until the oysters just begin to open.

  5. 5

Carefully remove the oysters from the grill. Discard any oysters that did not open.

  6. 6

Spoon a generous amount of the prepared scallion oil over each oyster.

  7. 7

Garnish with fried shallots and chopped cilantro.

  8. 8

    Serve immediately while hot.
